VIDALIA & MORREL SAUTEE ˝ TO 1 LB. Morels 1 med. Vidalia or other sweet onion 2 tbl. Of butter or olive oil 1 tsp. Of pale dry cocktail sherry Clean the Morels by cutting in half and brushing off with a dry barbecue or pastry brush. Try to avoid washing. Slice the onion and sauté over medium heat in the butter or oil with the Morels, until the onions are clear and the Morels are softened Add the sherry and sauté an additional minute or two. Serve with meat, poultry, pasta, or eggs. Vidalia onions are in season around the same time as Morels, and make a fine compliment to these highly seasonal delights!
