Shrimp Fried Rice * 2 tablespoons vegetable oil 1 cup fresh mushrooms -- sliced 1/2 cup green onion -- sliced* 1 teaspoon fresh ginger root -- finely minced 2 eggs -- beaten 3 cups cooked rice -- chilled 2 cups cooked shrimp -- cut in small pieces 2 tablespoons soy sauce Heat oil in large skillet or wok over medium high heat. Add mushrooms, onions and ginger; stir-fry 1 minute. Push vegetables aside; pour egg into skillet and scramble. Add rice; stir gently to separate grains. Add shrimp and soy sauce; stir until thoroughly heated. Makes 6 servings. NOTES : *Use tops of green onions also.
