Caramel Corn 6 quarts popcorn -- popped 2 cups brown sugar -- lightly packed 1/2 cup corn syrup -- white 1 cup butter or margarine 1 teaspoon vanilla 1 teaspoon salt 1 teaspoon baking soda Place popcorn in large roasting pan; set aside. In medium saucepan combine brown sugar, white corn syrup and butter. Stir constantly over medium heat until mixture boils; boil 5 minutes and remove from heat. Add vanilla, baking soda and salt; stir until blended. Pour over popcorn, mixing well. Place roasting pan in oven at 250 F for 40 minutes, stirring occasionally. Spread caramel corn on a sheet of wax paper and allow to cool. Makes about 10 servings.
